Ingredients
- 1 package Georges Farmers Market Savory Starters Chicken Breast Chunks
- 1 cup buttermilk
- 3/4 cup all-purpose flour
- 1/2 cup cornstarch
- 1 egg
- 1 teaspoon hot sauce
- Kosher salt
- Freshly ground black pepper
- 2 cups panko bread crumbs
- Sweet chili sauce (recipe below)
- 2 cups cooked rice
- 1 avocado, thinly sliced
- 1 large cucumber, sliced
- 1 ½ cups finely shredded red cabbage
- 1 cup halved grape tomatoes
- Chopped parsley, for garnish
for the Sweet Chili Sauce
- 1/3 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon honey
- 2 teaspoons hot sauce
- Kosher salt
- Freshly ground black pepper
Preparation
- In a medium bowl, combine buttermilk with flour, cornstarch, egg, and hot sauce. Season with Kosher salt and freshly ground black pepper. Place the panko in a separate bowl. Dip chicken into buttermilk mixture, in batches as necessary, until fully coated. Remove from buttermilk mixture and coat in panko, pressing to coat.
- Preheat air fryer to 400°F. Spray basket with nonstick cooking spray and then place coated chicken in a single layer in the air fryer, in batches as needed. Spray chicken with cooking spray and cook for 12-16 minutes, flipping halfway, until the chicken is crispy and cooked through.
- Divide rice between bowls. Top with vegetables and Bang Bang Chicken. Drizzle generously with Sweet Chili Sauce and garnish with parsley.
- Whisk together ingredients in a small bowl and season with Kosher salt and freshly ground black pepper.
